*****Please bring the supplies listed below (except for the candy melts) to class with you.  For the first class, you do not need to bring cake layers, just frosting.  Bring the frosting of your choice or you can e-mail me and I will send you some recipes (diamonddesserts@bellsouth.net).   

 

Metal Piping Tips:  Wilton 3, 12, 16, 21, 67, 104, 2D  (You can find these at Michael's, AC Moore, Hobby Lobby, Sur La Table, etc.) -- Look for 40% off coupons in your Sunday paper for the craft stores.   ****You can buy these individually, or you can buy the Wilton Couse 1 Student Kit (although this is not a Wilton class), which also includes many of the items below.  Michael's, AC Moore and Hobby Lobby usually have 40% coupons in the Sunday paper.  Most accept competitor's coupons.

 

Piping Bags--  I use parchment triangles as well as clear disposable piping bags.  Featherweight piping bags are another option, and are reusable.  The bags vary in size.  I usually use approx. 12"-15" bags. 

 

Couplers- Plastic white couplers can be found at the craft/bakeware stores listed above.  I would recommend at least two standard sized couplers.  Couplers allow you to easily change a piping tip (for example a round tip to a star tip) without having to prepare a new piping bag.

 

Flower Nail- This simply looks like an oversized nail, and is helpful in making roses.  They are inexpensive and can be found at Michaels, AC Moore, etc.  on the baking aisle.

 

Offset Spatula- I prefer offset spatulas over the straight ones because they keep your fingers out of the way as you frost your cake.  They come in all different sizes but the one I use most is approx. 12", including the handle.  You can find these at  any of the stores mentioned above.

 

Cake Comb- These come in in plastic or metal, in all different shapes and sizes (usually triangular or rectangular) .  My favorite style is metal and rectangular, with one straight edge and 3 comb edges.  You can find plastic combs at Michaels and AC Moore, or metal ones at Sur La Table.

 

Candy Melts or Chocolate Flavored Bark (candy coating)-  You can buy one bag of white or chocolate colored candy melts from Michaels, AC Moore, etc.  You can find the "chocolate bark" on the baking aisle at the grocery store.  Candy Melts and Chocolate bark are the same thing.  I will show you how to make chocolate accents for your cakes.

 

Food Coloring Gel-  Any colors that you like are fine.  I would at least get 3 colors that compliment each other.  I personally use a lot of Wilton leaf green, rose, sky blue, black, "red red" and lemon yellow.  You will design your own cakes and so pick colors that you like most.  Most local stores only carry Wilton brand colors.  I also like Americolor brand, which has more color options.  You can find these online.

 

 *Optional:  I love my cake turntable.  These come in all different styles and prices.  The least expensive that I have seen is a Wilton trim and turn, which is available at the craft stores and work just fine.  After a few years, I bought a nicer metal one at Sur La Table.  Turntables make frosting your cake easier, as you can easily spin the cake and frost, but it is not a requirement for the class.

 

*Optional:  Small cookie cutters, such as a set of small circular or star shaped cutters which you can find at Michaels and AC Moore.  I will show you how you can embellish your cakes with fondant cut outs, but you may prefer to pipe similar designs with buttercream instead.  (I will bring fondant to class one day to share so that you can experiment)

 

*Optional:  Cake cardboards.  You can find these at the craft stores or at If It's Paper.  I put my cakes on cake cardboards, but you may also choose to decorate on a platter or plate from home instead. 

Items from around the house that you will find helpful:  Wax Paper, tooth picks, scissors, serrated knife, sharp knife or exacto knife, paper towels, small paintbrush, plastic wrap and aluminum foil.

By Mail

You may register by mail using the continuing education course registration form found on the next page. Complete the form and mail it in with your check, money order, or Mastercard/Visa information to the address shown on the form. If paying by check, the account holder's name, address and account number must be pre-printed on the check. Do not send cash.

 

In Person

You may also register in person by completing the continuing education registration form on the next page and bringing it with your payment (check, cash, Mastercard/Visa, or money order) to one of the GTCC Campuses. Register at the Jamestown Campus, located at 601 High Point Road, Monday thru Friday, 8a-5p, in the Medlin Campus Center; the Continuing Education Center at the Greensboro Campus, located at 3505 E. Wendover Avenue, Monday thru Thursday, 8a-7:30p, Friday, 8a-5p; and at the High Point Campus, located at 901 S. Main St., Monday thru Thursday, 8a-8p, Friday 8a-5p.
